Well first off I took your advice and bought a Breville Food processor ….I love it. Then I made your salsa recipe …. then I made more ….made over 50 pints and have about 12 left. I give it to everyone … then they want more. What a wonderful recipe ….I have given to people at work and then others come and ask me if I have more. yesterday I went and got 4 more bushels of tomatoes and here I go again. Thank you for the good tips and wonderful recipe.
Have sterilized pint jars and lids and screw caps ready (they should all be washed in very hot water). Use a canning funnel and ladle hot salsa into jars, leaving a ½-inch head space. Wipe rims clean with a damp cloth and carefully place lid on and screw cap in place. Process in a boiling water bath for 15 minutes, then place upright on counter for 24 hours (see recipe notes for link to USDA Canning Guidelines). You will hear popping sounds as the jars seal. If after 24 hours, any haven't sealed, put in refrigerator to use now.
I tried this tonight. I made your recipe as written and then added several cups of peaches to the mix. My jalapenos were super spicy so I decided to add a bit of sugar (probably half a cup) to bring out a bit more of the sweetness of the peaches. It was very tasty! My understanding is that all these additions are safe since peaches are adding extra acid and the sugar is just for flavor since there is already plenty of vinegar.
For canning whole tomatoes, I like those that are firm, but small and round. They hold up better during canning if they are not overripe. Pearly Pink, Stupice, and Glacier are some of my favorites. Made this yesterday w/my sister & we served it to our husbands & they thought it was the best ever! We all couldn’ Stop eating it!! Also so easy to make. I added a step. If you like salsa w/o tomato skins, just slice in half & lay face down on sheet pan w/parchment paper. In oven on broil about 5 minutes, the skins wrinkle right up & pull off easily!
The acid ingredients used in salsa help preserve it and prevent botulism poisoning. You must add acid to canned salsas because the ingredients’ natural acidity may not be high enough. Commonly used acids in home canning are vinegar and lemon juice. Lemon juice is more acidic than vinegar, but has less effect on flavor. Use only vinegar that is at least 5% acid and use only bottled lemon juice.
It needs to be cooked ahead of time so that the flavors are blended and you can taste it and make sure it’s how you want before canning. With the big pot for canning, I have a quilted hot pad under them instead of a rack. I never bought a rack because the hot pads work just fine. You need something under the jars but it can be as simple as a kitchen towel (I have not broken a jar in 3 years! So it must be okay, lol). Mexican oregano is a dried herb used in Mexican cuisine. It’s similar in appearance to regular, Mediterranean oregano but is, despite its name, a cousin of lemon verbena rather than a member of the origanum family to which oregano belongs. It shares some of oregano’s unique and pungent earthy flavors and aromas but more subtly so with an added grassy kick of citrus and licorice. Mexican oregano is readily and cheaply available online and adds a unique element to Mexican dishes. If you can’t get Mexican oregano, you can substitute a pinch of marjoram or even regular oregano, just use a little less than the recipe dictates.
OMG! This IS the best salsa!!! I used Romas to make a tomato sauce for the recipe. I used regular fresh tomatoes from the garden and skinned, chopped, and squeezed juice from them. I followed the recipe exactly except for no sugar. I think the 100% apple cider vinegar is important (not apple cider flavored vinegar). Thanks so much for sharing your excellent salsa recipe.
TIP: if you want a milder salsa, you can skip the jalapenos and use 1-1/2 cups of milder peppers. If you’d like it spicier, decrease the mild peppers to 3/4 cup and increase the jalapeños to 3/4 cup. You can play around with the types of peppers you like best, just not the amount – a total of 1-1/2 cups of peppers for one batch is the limit for safety.
This recipe is a great starting point to develop your own Mexican salsa recipe. Adjust any or all of the ingredients to suit your tastes. Although this recipe calls for charring the chiles, you can also make it without charring them. Add more chiles for a spicier sauce or reduce the number for a milder version. Substituting jalapeño chiles for the serrano chiles will make a milder salsa too.
