Real Beef Enchiladas, Spanish Rice, Refried Beans!

Filling:

1 # Ground Beef or Chicken
1 large onion
2 cloves garlic
7 oz can green chilies
2 beef bouillon cubes
1 tsp black pepper
1 tsp cilantro
½ tsp cumin
1 tsp chili powder
1 tsp paprika
1 tomato
1 avocado
sour cream
shredded lettuce
12 oz shredded cheddar

Sauce:

1/4 cup butter
1/4 cup flour
1 tsp paprika
1 tsp chili powder
3 beef bouillon cubes
1 tsp cilantro
1 tsp cumin
1 tsp pepper
2 1/4 cup water

Spanish Rice:

2 tblsp butter
½ tsp paprika
½ tsp chili powder
1 cup uncooked rice
1 small onion
1 clove garlic
1 cup diced tomatoes
1 ½ cups water
½ tsp cumin
½ tsp black pepper
1 chicken bouillon
1 tsp cilantro

  1. We had this for dinner. This is my first time to cook Mexican food. My father rarely compliments my cookery, but this one he said it was really good! 🙂 Thank you Praxxus for this AMAZING recipe it was so delicious! 🙂

    1. My grandmother started making these like this while living in Mexico so it is not an American version at all. It is HER version. Please accept that not everyone in a country follows one method. Mexicans can be creative and not follow the norm. My grandmother was one of those people. She was a very creative fantastic Mexican citizen making Mexican food HER way. 🙂

    2. Praxxus55712 That’s true because all of my friends moms make their enchiladas different, they all have a version of what they grew up with. My mom uses a Michoacán recipe because its her favorite and she’s from Sinaloa. Its a red sauce made from dried chiles and she uses chicken and cheese to fill them. 🙂

I made this tonight using your video step by step and following carefully except I added some black beans in with the meat to stretch it to,make ten enchiladas (the tortillas came in a ten pack and I didn’t have any use for four extras lol) Everything came out exceptional and exactly as you show. It filled two pans with bubbling cheesy goodness. Great recipe and great video. And these suckers are very filling! Plenty for lunch tomorrow! I usually don’t leave comments but wanted to let you know this rocked. Oh…..and I made more sauce hahahaha! Thumbs up!

    2. What I do when I have a few left over tortillas, is to scramble some eggs, mix in some cheese, and put them into the middle of a warmed tortilla.. makes a great breakfast. Add some sauce if you wish.

  4. Looks awesome. I made some just the other day but used portabello mushrooms and it came out soooo good.

    1. There is no non-stick pan in this video. It’s cast-iron and metal on metal is perfectly fine

    2. Well at least it isn’t plastic and he left the stove on to go to the bathroom and left the plastic spoon on it. I did that and it melted it lmao 😂

    3. What the hell is wrong with using a metal utensil in a metal pan? You some type of nut or something? It’s a cast iron skillet by the way. Now I can see if you’re ham fisted and scraping the bottom but he’s not. Find something to criticize.

  5. Back in 2009 I made these for my family, they remain my most talked about creations lol
    I was nine when I made them (took me HOURS and I never wanted to make them again I was so worn out) I am going to be making them again for my dad’s birthday on Tuesday! Wish me luck!

    1. She ate two plates and also took some for work for her lunch break and they look like enchiladas to me.

  6. OMG these were good! I made them a couple of days ago and the family is already asking for them again! I’ve eaten a lot of enchiladas.Living in Texas they are almost a staple. These are by far the best I’ve ever had. The sauce makes them amazing. They are even better the next day, if you can get them to last that long. The rice was great too. It’s the first Mexican rice recipe I have found that comes out with the flavor and color I am looking for. Thanks for sharing.

  8. I’m so happy to see you using a cast iron skillet!!!! Cast iron skillets all the way!!!! ( yes I’m old school cook) lol

    1. If  you have a cast iron skillet you can cook anything any where! Lets go camping. lol I did mess my Mom’s skillet up when I was a teen. She gave me permission we just didn’t know it would mess it up. We didn’t have money or a BBQ grill so I took her skillet and put it in an old metal plant stand. It sat right down in it. I put charcoal in the skillet and placed a metal cooling rack over it. Lit those charcoals and cooked some burgers & hot dogs on that rack. Turned out yummy.

    1. Will be making this in a couple of days. Have to finish my spaghetti first. I think I watched this years ago and this is the reason I started watching your videos Praxxus.
