Tamales are one of my favorite foods, and part of my family’s holiday tradition. While they are traditionally made with lard, these tamales are vegan, low-fat, oil-free, and they taste amazing!

Ingredients: (makes about 15-20 tamales, depending on how thick you spread the masa)
15-20 ojas (corn husks)
3 cups masa
2 tsp baking powder
2 tsp salt-free seasoning (such as Mrs Dash)
2 tsp chili powder
1 cup mashed sweet potato
3 cups vegetable stock/broth
