6 cups boiling water or broth (Careful)
5 cups masa
4 tsp baking powder
2 tsp salt
1/2 cup lard or shortening
Mix dry ingredients together. Slowly mix into wet ingredients in parts. Spread into pans on waxed paper. Add filling to one pan. Flip the other layer on top. Chill covered overnight. Slice into bars and wrap in waxed paper (patty wax). Steam for 3 hours and serve hot.
For the filling, I use Badia Fajita and Badia Complete seasonings. I cooked my filling in a cast-iron pot.
