Tamaleria La Doña on Compton Boulevard looks more like a house than a factory, but inside it's easy to see why customers travel from all over Los Angeles and Orange counties to buy tamales by the dozen. Aside from a few tables, every usable inch of space is dedicated to an overwhelmingly efficient (and entirely visible) tamale assembly line, where cooks de-husk huge piles of cobs, stir ingredients in a giant vat and steam tamales filled with meat — and even fruit.
