  2. is not queso bronco, is queso fresco ( panela suizo), we dont use monterrey jack hahaha s funny, and no tamales are not done with fish not even in merida quinta roo, or oaxaca there are 4 types of style of tamales in mexico in sme use the corn leaf to pack them like she is ding it, in some other cases banana leaf, u can use fry beans inside or whole bean in the mixture venison pork and the mst common but also cilanter chicken but well

  6. Wow, I’ve never see scoops of dough put in the middle with the chili.  The masa should be applied to the entire husk with a spoon in a thin layer, then filled in the middle with the filling of your choice.  Big scoops in the middle will not cook evenly.  That is why I do not eat tamales at any restaurant.  Our family recipe to make tamales is 4 pages long.
