– CORN HUSKS for tamales
– MEAT: 3.5 lb pork shoulder, ½ onion, 6 garlic cloves, 1 tbsp salt
– SALSA VERDE: 2 ¼ lb tomatillo, 8 serrano chiles, 2 jalapeño chiles, ¼ onion, 2 garlic cloves, 1 bunch cilantro, 1 ½ tsp salt or to taste
– MASA: 1 lb pork or vegetable lard, 2 ¼ lb corn masa mix for tamales, 8-9 cups pork or chicken stock, 1 ½ tbsp salt, 1 ½ tbsp baking powder

  5. In Guatemala, we call these chuchitos. Guatemalan tamales are bigger and are always made in banana leaves. That is the only thing different about them. Still, delicioso!

    1. Hola Sandie 🙂 I will be uploading more tamales recipes shortly, and regrettably, do not have corn masa mix for tamales at the moment to give you most precise measurements. However, you can estimate 1 cup = 125 gm = 1/4 lb. Hope this is helpful?
