2 eggs, 1 c shredded (4blend) cheese, 2/3c milk, 1 tbles ground cumin
1/8 teas ground red pepper, 2 (15oz)cans cream style corn, 2 boxes corn muffin mix, 2 (4oz)cans chopped green chiles (drained) 1/4 c each green and red bell peppers (chopped) 1/4 chopped onions, 20oz can red enchilada sauce, 2c shredded chicken breast, sour cream. Follow Tutorial

  5. Oh good grief, you have made something so delicious I can’t stand it! Wow, when you pricked the casserole and added the sauce…………perfection. The recipe is complete happiness on a plate. Nice use of egg beaters to shred the chicken, never seen that before! Oh yeah…..Mexican American Fusion Food! What a fantastic recipe ma’am…delicious and beautiful and always love your cookin’! Sure beats all that work with the corn husks. Perfecto~!

  7. Hello Chris, just wanted to let you know that I made your chicken tamale casserole, and it was delicious!!! My family loved it. I did add green chiles, onion, cilantro, cumin , and Sazon seasoning to my water when boiling the chicken breast and it added so much flavor! thank you for a great recipe!
